Blankschien wins third prize for potato recipe

Marilyn Blankschien of Clintonville has won third prize in the Wisconsin Potato and Vegetable Growers Association’s (WPVGA) Win with Wisconsin Potatoes Recipe Contest.

Blankschien entered her Potato Pecan Toffee Bars in the contest.

“Years back I made cookies using instant mashed potatoes. I wondered if it would work with fresh potatoes,” she stated. “I gave it a try by cooking the potatoes, butter and brown sugar together. This mixture alone tasted good, so I decided to make a bar and use part of this as the filling.”

She later decided to enter the recipe in the Win with Wisconsin Potatoes Recipe Contest. The result? Third prize and a $50 gift card to a grocer of her choice, courtesy of the WPVGA.
