Making cheese in Wisconsin

How UW research center supports dairy industry

Dean Sommer will present “How the Center for Dairy Research Supports Wisconsin’s Dairy Industry” at 6:30 p.m. Monday, June 20.

Hosted by Winchester Academy, the program will be in the lower level at the Waupaca Area Public Library.

Sommer is a cheese and food technologist at the Center for Dairy Research at UW-Madison.

The Wisconsin CDR is the largest dairy center in the U.S. and one of the largest in the world.

Established on the UW campus in 1986, the CDR works with dairy processors, packagers, marketers, retailers and food service operations.

By doing so, the CDR contributes to dairy farmers’ success through increasing the demand for their milk and maximizing the revenue that their dairy products generate, which translates into bigger checks for dairy farmers.

Sommers will explain how the CDR accomplishes this through three main activities: dairy product innovation, including developing new products and conducting research; industry support, such as troubleshooting problems and conducting pilot trials; and training and education, typically through educating the next generation of workers and by providing short courses in dairy topics to 1,500 dairy plant workers annually.

The program will feature a cheese tasting.
