Virginia “Ginny” Simpson, age 88, of Waupaca, passed away peacefully on August 18, 2022 at Bethany Home.

Ginny was born October 15, 1933 to Edward and Emma Ultang and was the second of five children.

Ginny lived a life in fearless pursuit of her dreams. She graduated valedictorian of Weyauwega High School’s class of 1950 where she played trombone in the school band.

After high school, Ginny met Dale Simpson at Bear Lake Wisconsin. It was then she broke off a prior engagement to follow her heart and his blue eyes to the altar on April 15, 1955. Together they raised two beautiful sons, Carey and Thomas, both of whom would learn the value of hard work and tenacity as they watched Ginny manage the family restaurants: Simpson’s Indian Room of Waupaca and the Red Ox of Appleton.

Despite her success in the restaurant business, Ginny was never extravagant and often spent her free time generously volunteering at Bethany Home and the Waupaca Hospital, as well as helping with communion at Trinity Lutheran Church.

Ginny was an avid golfer and would often regale her grandchildren with stories of the year she was Women’s Club Champion at the Waupaca Country Club. During winter, she was part of the Curling Club and would often enjoy cocktails at Simpson’s with “the girls” after practice.

If you ever had the great fortune to meet Ginny, you would remember her by her blonde hair, perfectly put together outfits, and pink lipstick smile all underscoring a distinctly genuine, kind, and generous soul who even years into her struggle with Alzheimer’s would tell everyone of the two beautiful boys she had and the restaurants she had put so much of herself into.

She has left her surviving husband of 67 years, Dale Simpson; her children, Carey (wife Amy) and Tom Simpson; grandchildren, Ashley (husband Will), Joseph and Rylie Simpson; and great grandchildren, Odin Allen and Charly Brostrom with fond memories and a legacy of kindness, diligence, and love. Ginny is further survived by numerous nieces, nephews, other relatives and friends. She will be greatly missed by all who knew her. Ginny was preceded in death by her parents and her siblings.

A Memorial Service will be held at the Holly Funeral Home in Waupaca at 12:00 (Noon) on Friday, September 2, 2022, with Reverend Andy Behrendt officiating. Memorial Visitation will be held on Friday, from 10 am until the time of the service. In lieu of flowers, memorials can be made out to Carey or Tom Simpson which will later be donated to a charity of their choice in Ginny’s name.
