Tacos find new home

Rolling Tacos made a name for itself as a food truck in the area. Now it has a home inside the Waupaca BP at 1070 W Fulton St.

Food truck goes brick-and-mortar

Rolling Tacos has been around town for a couple years. The mobile food truck will still roll and have stops in King, New London, Northport, Fremont and various community events.

Now the tacos are no longer a moving target. Owner Carlos Martinez recently set up shop at the lunch counter and kitchen inside the Waupaca BP at 1070 W. Fulton St.

The venue is similar to Subway where a customer has a choice of meats and other ingredients to load onto a taco. Also on the menu are burritos, tortas, tamales, nachos and quesadillas.

Martinez also plans to make gisados on the weekend which take a lot more preparation.

“We grill everything. We don’t do it here,” he said as he waved to the flat-top commercial griddle in the kitchen. “We do it in the truck and it tastes so much better. You can taste the difference. We’d like to open a bigger restaurant but right now we are OK. When we stay smaller, everything comes out better. And no hard shells. That’s not the real stuff,” said Martinez.

He used to own Taco House in Appleton. He sold that and started the Rolling Tacos food truck right when Covid hit. He survived that and prospered enough to open this brick-and-mortar location.

Rolling Tacos is open from 11 a.m. to 8 p.m. every day of the week.
